This chocolate avocado mousse is, in fact, a super food. The base of these recipe is avocado, which is a hi nutrition value food, low carb, rich in good fats, vitamins (C, E, K, B) and minerals (magnesium and potassium). A dessert that will make you feel full and satiated and will help you to keep sugar levels in the blood stable because of the fat content.

Ingredients:
- 3 avocados
- 12-13 pitted dates, soaked (just enough water to cover them)
- 2 tbsp coconut oil
- 1 tbsp Monk Fruit
- 1 ¼ cup cacao powder
- 1 pinch salt
Instructions:
- In a food processor, add avocados, dates (along with the soaking water), coconut oil and process a little bit to combine the ingredients.
- Next, add Monk Fruit, cacao powder and salt and process again until smooth. You may need to scrape down the sides of the food processor with a rubber spatula.
- Chill mousse in the fridge until ready to use it.
Tip: Garnish with fresh fruit or chopped nuts. Also, you can have it warm as a pudding.
