This stir fry rice is the best! It is healthy, quick and easy to make, plus you can customize the vegetables you are putting in. Enjoy!

 

 

Ingredients:

  • 2 tbsp sesame oil
  • 4 garlic cloves minced
  • 1 tbsp fresh ginger
  • 1 cup white onion diced
  • 1 cup shitake mushrooms diced
  • 1 cup zucchini squash diced
  • 1 cup carrot diced
  • 1 cup broccoli florets
  • 1 tbsp avocado oil
  • 4 cups cooked basmati rice
  • 1 tsp monk fruit sweetener
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp Braggs liquid aminos
  • 1 tbsp rice vinegar
  • 1/3 cup scallions (to garnish)
  • Sesame seeds (to garnish)

 

Instructions:

  1. Heat a large skillet over high heat until very hot, add sesame oil, garlic, ginger, onion and stir often until golden brown, then add zucchini, shitake mushrooms, carrot, broccoli and keep stirring about 4 minutes, it´s ok If they are still crunchy, they will get another few minutes to cook at the end of the stir fry. Transfer then to a plate and set aside.
  2. Heat 1 more tablespoon of oil over high heat, add the cooled rice, stir fry and season with onion powder, garlic powder, monk fruit, aminos and rice vinegar.
  3. Return the vegetables to the skillet with the rice. Cook stirring often until everything is combined and hot and the vegetables are just tender, about 4 minutes.
  4. Garnish with scallions and sesame seeds, serve right away.
