Made with caramelized onions and garlic, this delicious creamy onion soup is a very simple and classic recipe that goes perfect with any main dish. Enjoy it hot with you loved ones.
- 2 tbsp avocado oil
- 5 garlic cloves
- 3 medium white onions
- 3 celery sticks
- 2 medium white carrots
- 2 tbsp Dijon mustard
- 2 cups coconut milk (or vegetable broth)
- 2 tbsp nutritional yeast
- Pinch of pepper
- 1 tsp salt
- In a pot add oil, sauté garlic, onion, celery and carrots all cut into thin slices with Dijon mustard stirring often for about 20 minutes until the onions are translucent and brown.
- Add the milk or broth just to cover the vegetables and bring to a boil, reduce heat and add the lid to the pot. Simmer for about 5 minutes until the onions are soft, season with nutritional yeast, pepper and salt to taste.
- Using a blender puree the soup until smooth and serve.
