Made with caramelized onions and garlic, this delicious creamy onion soup is a very simple and classic recipe that goes perfect with any main dish. Enjoy it hot with you loved ones.
2 tbsp avocado oil
5 garlic cloves
3 medium white onions
3 celery sticks
2 medium white carrots
2 tbsp Dijon mustard
2 cups coconut milk (or vegetable broth)
2 tbsp nutritional yeast
Pinch of pepper
1 tsp salt
In a pot add oil, sauté garlic, onion, celery and carrots all cut into thin slices with Dijon mustard stirring often for about 20 minutes until the onions are translucent and brown.
Add the milk or broth just to cover the vegetables and bring to a boil, reduce heat and add the lid to the pot. Simmer for about 5 minutes until the onions are soft, season with nutritional yeast, pepper and salt to taste.
Using a blender puree the soup until smooth and serve.
